Artichoke & Arugula Salad

Ingredients:

1 head of trimmed & quartered artichokes1 bunch of arugula

1 bunch of greens (spinach, kale, swiss chard)

1/2 cup of grated Parmesan cheese

1/4 cup of olive oil

2 tbl of lemon juice

1 teaspoon of salt

1/2 teaspoon of black pepper

Instructions:

In a large bowl, combine the artichokes, greens, & Parmesan cheese. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to coat.
