Moroccan Carrot Salad

Ingredients:

2 pounds carrots, peeled and grated

1/2 cup of olive oil

1/4 cup of lemon juice

1/4 cup of honey

1/4 cup of chopped cilantro

1/4 cup of chopped parsley

1 teaspoon of ground cumin

1/2 teaspoon of salt

1/4 teaspoon of black pepper

Instructions:

In a large bowl, combine the carrots, olive oil, lemon juice, honey, cilantro, parsley, cumin, salt, and pepper. Toss to coat. Serve chilled.
