Bring a delicious, healthy, and high-yielding garden staple to your table with our Spaghetti Squash. A legendary winter heirloom favorite, this variety produces beautiful, uniform, oblong fruits that mature into a gorgeous, smooth, canary-yellow shell. Growing to a perfectly manageable size of about 3 to 5 pounds each, it is celebrated worldwide as the ultimate all-natural, low-carb alternative to traditional pasta. When baked or roasted, the tender golden flesh easily shreds with a fork into long, crisp, stringless strands that perfectly mimic spaghetti noodles.

Whether you are trying to maximize a backyard plot with highly nutritious food or growing premium winter squash for local farm stands, Spaghetti Squash grows rapidly and vigorously. Its rugged vines deliver a heavy harvest of versatile, gourmet fruits that look beautiful resting in your garden and taste even better when brought into the kitchen.

Quick Growing Facts

  • Plant Type: Warm-Season Vining Winter Squash

  • Fruit Weight: 3 to 5 pounds

  • Vine Length: 6 to 8 feet (Vining habit)

  • Days to Harvest: 85 to 100 days

  • Sunlight Requirements: Full Sun (Crucial for ripening the shell to a deep yellow)

  • Hardiness Zones: 3 through 11 (Thrives easily as a summer crop across the entire United States)

Planting & Care Guide

  • When to Plant: Direct-sow seeds outdoors directly into the warm soil after all danger of spring frost has passed and soil temperatures reach at least 70°F. Squash vines have sensitive root systems and do best when sown right into their permanent home. For regions with exceptionally short growing seasons, you can start them indoors in biodegradable peat pots 2–3 weeks before the final frost.

  • Seeding Depth: 1 inch deep. Plant 4 to 5 seeds together in raised mounds (or "hills") of loose, well-draining soil. Mounds naturally trap the sun's warmth and drain water perfectly, which squash seedlings love. Seeds typically sprout in just 5 to 10 days.

  • Spacing: Space your planting mounds 4 to 6 feet apart. Once your seedlings are a few inches tall, thin each mound down to the strongest 2 or 3 plants so the vines have plenty of room to stretch out and run.

  • Watering: Maintain consistent, deep moisture, especially when the vines are flowering and setting fruit. Squash are thirsty plants and need about 1 to 2 inches of water per week. Always water deeply at the base of the plant early in the morning, keeping the large leaves dry to prevent powdery mildew.

  • Pro Gardening Tip: The secret to perfect spaghetti strands and long-lasting storage is all in the harvest thumbnail test! Leave the squash on the vine as long as possible until the skin transitions from light green-yellow to a solid, matte yellow. Try to press your thumbnail into the skin—if it’s hard and doesn't pierce easily, it’s ready! Cut the stem with sharp shears, leaving 2 inches attached to prevent rot. Let the harvested squash sit in a warm, dry, sunny spot for 10–14 days to cure. This thickens the protective shell, making the squash capable of storing deep into the winter.

Why You'll Love It

  • The Ultimate Low-Carb Pasta: Boasting a mild, buttery, and subtly sweet flavor, the low-calorie flesh shreds into flawless, fiber-rich "noodles" that beautifully absorb marinara, pesto, garlic butter, and Alfredo sauces.

  • Exceptional Storage Life: Once properly cured, these tough, thick-skinned squash store beautifully in a cool, dark pantry or cellar for 3 to 6 months, providing your kitchen with fresh, homegrown food long after the garden has gone to sleep.

  • Vigorous & High-Yielding: Known for its rugged, resilient growth habit, a single healthy vine can produce an abundant harvest of 4 to 7 large squashes, making it incredibly productive for the amount of space it uses.

  • Excellent Pest Resistance: Because of its tough, bristly vines and thick foliage, it is generally much hardier and more resilient against common garden pests than delicate summer squash varieties.
